175/1993) The 3 Brewers, Heartland:  Quivering With Ecstasy by The 3 Brewers of Ontario:  *1/2;  cask;  the seasonal, Witteke Belgian ale with coriander and orange zest, has been soured with lactic acid and Mandarina Bavaria and Motueka (from New Zealand) hops have been added;  interesting notes of lime; tart, cidery nose;  astringent cidery notes, lime, tropical flavours;  the sour is dominant;

It may be a short cut but using lactic acid to sour is more reliable, according to the brewmaster.  I find it easier on my g.i. tract.
